Applesauce Zucchini Bread

Over the summer I was on a real zucchini kick, and kept on trying out different zucchini bread recipes. I was specifically trying to tweak and perfect a recipe in which you substitute applesauce for some of the vegetable oil to essentially make a low fat zucchini bread. This is tricky to balance, because it also adds sugar. However, an added benefit is that it makes a wonderfully moist bread. After months of experimenting, I think I finally figured it out. I took a loaf to a baby birthday party last month, and it got rave reviews. Give it a try and let me know what you think! ***Yields 2 short loaves or 1 full loaf*** Low Fat Applesauce Zucchini Bread ***Wet ingredients*** 1 c Sugar 1 c Applesauce 3 Eggs 1 tsp Vanilla extract 2 tsp Apple cider vinegar 1 tsp Lemon juice 1/2 c Vegetable Oil ***Spices*** (I recommend doing this to your own taste. I like a heavily spiced bread, so this is what I do.) 2 tsp Cinnamon 1 tsp Cardamon 2 tsp Lemon zest 1 tsp Grated ginger
